Hash Browned Potatoes
3 large potatoes, boiled 1/4 cup milk 3 TBS flour 2 TBS minced onion 2 TBS minced fresh parsley or chervil 1/2 tsp salt 1/2 tsp pepper dash tobasco 3 TBS bacon fat, rendered chicken fat or oil
Heat electric skillet to 300*F. Peel and dice potato. You should have 3 cups. Mix in remaining ingredients except for oil. Heat fat in skillet. Pack potato mixture in firmly, spreading out in an even layer. Cook 7 - 9 minutes until the bottom side is brown. turn the mixture over in segments. Smooth down again, cooking until other side is browned. (7 - 8 minutes) Cut into wedges to serve. Serves 4.
