2 pounds (900 g) small new potatoes, cut into even-sized wedges 1 T (15 ml) virgin olive oil 2 T (30 ml) fresh lemon juice 1 bay (or cassia) leaf, broken Paprika or cayenne pepper Salt and freshly ground pepper
Preheat the oven to 375 F (190 C). Combine the potatoes, oil, lemon juice and bay leaf in a large baking dish and toss to mix. Sprinkle with paprika and season generously with salt and pepper. Bake, covered, until the potatoes are tender and crusty, stirring occasionally, 45 to 60 minutes. You may want to sprinkle with additional lemon juice just before serving.
Makes 6 servings.
