Corn and Tomato Pie
8 slices bacon, halved 2 cup dry bread crumbs 1 green pepper, minced 2 cups coarsly chopped tomatoes, peeled, seeded 3 cups corn kernals 1 1/2 tsp salt 1/4 tsp pepper 1 tsp brown sugar 1/4 cup minced fresh basil
Heat oven to 375*F. Use 4 slices bacon to line a shallow 2 qt casserole. Top with half the bread crumbs. Layer in green pepper, tomatoes and corn, seasoning each layer with salt and pepper, brown sugar and basil. Sprinkle remaining crumbs on top. cover with remaining bacon. Bake for 1 hour or until top is lightly browned. Serve hot to 6 people. `
