Fluffy Mashed Potato Patties
1 egg 3 TBS flour 3 TBs minced onion 2 TBS minced parsley 2 tsp baking powder 1/8 tsp tabasco sauce 4 cups leftover mashed potatoes 2 to 3 TBS peanut oil
In medium mixing bowl, beat the egg slightly , then blend in remaining ingredients except for oil. Heat oil to 375*F, then using a 1/4 cup scoop drop batter into hot oil, flattening slightly. saute patties 4 to 5 minutes. Turn and saute 4 to 5 minutes longer, until golden brown and puffy. Serve hot with Tomato Sour Cream Gravy. Serves 4 to 6
