Hodge Podge
(best made with tender early vegetables)
1 1/2 cup each green beans, yellow beans, sliced baby carrots, tiny new potatoes(scribbed and diced) 1 medium onion, diced 1 1/2 cup shelled peas 1 1/2 cup blend or coffee cream 1/3 cup butter salt and pepper to taste
Trim ends from beans; cut into 1 inch pieces. In large pan, in salted water bring beans and carrots to a boil. Simmer 7 minutes until tender. Add potatoes and onion and cook 10 minutes. Add peas and cook 5 minutes. Drain all but 2 cups of the water from the pan. Stir in cream and butter carefully. Season and serve. Serves 6 to 8.
