For 4 Servings:
1 lb. ground beef 4 slices provolone cheese, or cheddar cheese 1/4 cup bottled roasted red bell peppers, drained and chopped 1/4 lb. marinated artichokes, drained 1 Tbs. plus 1 tsp. unsalted butter 1 Tbs. plus 1 tsp. Worcestershire sauce 4 large flour tortillas, warmed 1/4 cup mayonnaise Shape beef into 8 flat patties on wax paper. Season with salt and pepper to taste. Top half the patties with a slice of cheese and a spoonful of artichokes and peppers. Cover patties with another meat round, pinching edges together to enclose filling. Melt butter with Worcestershire sauce in a heavy skillet over medium heat. Working in batches if necessary, arrange burgers in skillet, without overcrowding, and sauté about 10 minutes, turning occasionally until cooked throughout. Transfer to a platter and keep warm. Spread mayonnaise over each tortilla and add burger. Fold tortillas, enclosing burger to make a packet.
