Beef Goulash
Ingredients 1 1/2 lb stewing steak — 2 Tablespoons oil — 2 onions sliced 1 1/2 Tablespoons paprika — 1 1/2 Tablespoons tomato paste 1 1/2 Teaspoons salt — Pepper to taste — 1/2 Teaspoon sugar 1 cup water
Method 1. Trim beef and cut into small cubes 2. Heat oil in a heavy pan and brown beef quickly on all sides 3. Lift meat out and put aside 4. Reduce heat, add onion to pan and sauté til soft 5. Add paprika, tomato paste, salt, pepper, sugar and water 6. Bring to a simmer, re-add the meat to the pan and reduce heat 7. Cover tightly with lid and simmer gently for 1 1/2 to 2 hours or til meat is tender and sauce has thickened. 8. Garnish with chopped parsley 9. Serve with buttered noodles, boiled rice or sautéd potatoes and a green vegetable.
