Beefy Skillet Calzone
8 diagonally cut slices French bread, 1/2inch thick 2 tablespoons grated Parmesan cheese 3/4 pound beef sirloin or flank steak, cut into thin strips (beef is easier to cut if partially frozen) 1 tablespoon olive or vegetable oil 1 small sliced green bell pepper 1 finely chopped garlic clove, (1 to 2 cloves to taste) 1, 14 1/2ounce can Italian herb style diced tomatoes with juice 1 cup pizza sauce 1, 4 1/2ounce jar sliced mushrooms, drained
Set oven for broiling. Place bread slices on ungreased cookie sheet. Spray bread with cooking spray. Sprinkle with cheese. Broil with tops 4 to 6 inches from heat for 1 to 2 minutes or until light brown. Set aside. Heat oil in 10inch nonstick frying pan over a medium/high heat. Saute beef, bell pepper and garlic in pan, stirring occasionally, until beef is brown. Stir in tomatoes, pizza sauce and mushrooms. Cook 2 to 4 minutes or until hot. Place 2 toasted bread slices on a serving plate. Top with beef mixture. Makes 4 servings.
