Baby New Potatoes with Mushroom Topping Prep: 10 min, Cook: 25 min. 2-3/4 baby new potatoes 1 Tbs. plus 1 tsp. unsalted butter 2 scallions, chopped 5 ounces fresh mushrooms, sliced 1/4 red bell pepper, seeded and chopped 1/3 cup heavy cream 1/4 tsp. chicken stock powder 1-1/4 tsp. fresh thyme, chopped 2 tsp. fresh rosemary, chopped Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes or until tender. Melt butter in a heavy nonstick skillet over medium high heat. Add next 3 ingredients and cook 10 minutes, stirring, or until shallots and mushrooms are soft. Add cream and stock powder. Reduce heat to low and simmer 5 minutes, stirring, or until slightly thickened. Stir in herbs. Serve potatoes with mushroom topping.
