Easy Chili Potatoes Prep: 10 min, Cook: 15 min. 1 Tbs. virgin olive oil 1-1/2 Tbs. chili powder 3/4 tsp. ground cumin 1/4 cup recipe-ready crushed tomatoes 1-1/2 tsp. cider vinegar 1-1/2 lbs. frozen hash brown potatoes, thawed 2 Tbs. unsalted butter Heat oil in a small skillet over medium heat. Stir in chili powder, cumin, and tomatoes. Simmer 1 minute, stirring frequently. Stir in vinegar and salt to taste. Remove from heat and set aside. Melt butter in a heavy nonstick skillet over medium high heat. Add potatoes and season with salt to taste. Sauté 7-8 minutes, stirring frequently until potatoes are tender. Stir in chili mixture and continue to cook 2 minutes or until potatoes are coated.
