Duchess Potatoes Prep: 10 min, Cook: 30 min. 1-1/4 lbs. medium potatoes, peeled and chopped 3 egg yolks 2-3/4 Tbs. cream 2-3/4 Tbs. Parmesan or Romano cheese, grated 1/4 tsp. paprika Preheat oven to 375°F. Cook potatoes in a large pan of boiling water 10 minutes, or until just tender. Drain and mash. Add next 3 ingredients and mix thoroughly. Pipe mixture in swirls onto greased oven trays. Bake 20 minutes or until golden brown. Sprinkle with paprika. Serve hot.
