Slap Hem Down Agin Corn-On-The-Cob This got its name from Granny Sams,Christine's Grandmother--The story goes that Christine's Grand Pa loved this so much that Granny had to threaten to Slap him if he stole another ear . This recipe is easily doubled just in case you have a corn thief running around
4 or 5 ears sweet corn 1/2 cup soft butter or margarine 1 tbls. prepared mustard 1 tspn. horseradish 1 tspn. salt Dash blk pepper Snipped parsley
Husk corn and strip of the silks. Spread each ear with a little horseradish butter--recipe follows--. Wrap loosely in foil and bake in a very hot oven (450 degrees) 20 to 25 minutes. To make horseradish butter, mix butter, mustard, horseradish, salt, pepper and parsley. Cream until fluffy and light.
