3 lg. potatoes, cooked, peeled, and mashed 2 1/2 c. sugar 1 1/2 tsp. salt 3 eggs 2 tbsp. shortening 1 c. sweet milk 5 tsp. baking powder 1 qt. flour Nutmeg to taste
Cream sugar, salt, and shortening. Add eggs, stir in mashed potatoes (warm). Add flour and baking powder alternately with sweet milk. Add nutmeg and mix well. Roll batter on floured surface. Cut with doughnut cutter and drop into hot cooking oil in deep fryer. Remove from liquid when both sides are browned. Makes about 6 dozen.
