CORNED BEEF WITH BARBARA'S MUSTARD SAUCE
being a lover of one pot meals ~ this is a great winter recipe all cooked in one pot.. so very good and tasty.. one of the great comfort foods..
ingredients:-
1 large stew pot 1 piece corned silverside/bolar blade/brisket water to cover 1/2 cup white wine vinegar 1 tablespoon sugar waxy potatoes for everyone peeled and halved carrots as required cut in large chunks celery as above, cabbage cut into quarters or eighths as needed... 1 dessert spoon hot english powdered mustard 3 to 6 tablespoons mayonnaise ~ to taste 1/2 cup cream 1 cup of liquid from pot..
method:-
cover meat in stew pot with water sugar, vinegar, and bring to the boil.. simmer at 25mins. per 500 gms.. approx 1 hours before finished.. place potatoes in with the meat keeping the water at a simmer.. 15 minutes later add the carrots and the celery...
meanwhile make sauce... put mustard, cream, mayonnaise and liquid from pot together in small saucepan.. and slowly render quantity down to about half.. simmering slowly and stirring occasionally.. adjust flavours to your taste...
when ready remove meat from water.. and cover with foil.. scoop out vegetables with slotted spoon.. and keep warm.. bring water to a fast boil and add the cabbage... boil for 10 minutes.. meanwhile slice and arrange meat and vegetables on a warmed platter and ~ place the cooked and drained cabbage in a warmed bowl... put sauce in a jug.. and serve..
