CHINESE COMBINATION SOUP [diabetic friendly]
this is a favourite of mine and the family.... it is my own recipe and it has been changed over the years... i hope you enjoy..
serve in large bowls... it is a complete meal....
this is a substitute for a meal and can be made with any combination of meats or fish or both... make sure you prepare everything first.. as cooking time is only about 5 minutes and you will have no time to do anything but cook...
ingredients:-
1 litre chicken stock... [home made or good quality bought]
2 handfuls baby bok choy washed and ready for use
1 small carrot cut into straws..
4 cloves of garlic sliced
12 small frozen dim sims.. or 6 large ones
1 pkt udon noodles
a little broccoli ~ a little cauliflower
a small onion cut in eights [wedges]
use a combination of green prawns, scallops, bay shrimp, thin sliced rump steak, pieces of chicken thigh meat [no skin] *chinese pork, *duck, and almost anything else you can think of .. use all or any combination you wish..
1 dessertspoon sesame oil
2 teaspoons soy sauce [optional] ot 2 tablespoons oyster sauce..
bring stock and garlic to a rolling boil ~ add chicken and dim sims boil for 3 mins ~ add any raw fish boil for 1 minute ~ add onions, beef, for 1 minute ~ add vegetables, noodles and any cooked meat or fish.. bring to the boil, add mix in soy sauce/oyster sauce and sesame oil and serve immediately...
* cooked marinated pork and chinese duck are available at any good chinese restaurant or at chinatown and can be cut for you ...
