6 oz Butter 8 oz caster sugar 1 Teaspoon Vanilla Essence 3 Eggs 10 oz S/R Flour 1/2 Teaspoon Salt 6 oz Milk 1 Cup thin Strawberry Jam Desiccated Coconut
Cream butter and sugar, add vanilla and eggs. Mix in sifted flour and salt alternately with milk. Spread batter into greased and floured Lamington tin. Bake in moderate oven for 30minutes, cool, cut into squares. Spread Jam thinly over cake, toss into coconut. Make chocolate lamingtons the same only replace the jam with melted chocolate.
