8 ounces bacon 6 ounces Swiss cheese, grated 1 medium onion, grated 3 large eggs, lightly beaten 10 ounces heavy cream 1/4 cup water 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon dry mustard
Preheat oven to 375°F. Generously butter a 9-inch pie plate.
Cook 1 slice of bacon until limp; cut into 1-inch pieces, set aside. Cook rest of bacon until crisp; drain and crumble in bottom of pie plate. Sprinkle cheese over bacon. Cook onion in 1 tablespoon of bacon fat, until golden brown, drain and sprinkle over cheese.
Beat together eggs, cream, water, and seasonings. Pour egg mixture evenly over onion in pie plate. Decorate with reserved bacon pieces. Bake 45 minutes, until knife inserted in center comes out clean.
