Chocolate Toffee Squares Source: www.simpleinternet.com/recipes/1 sleeve ( or maybe a few more crackers as needed ) of saltine crackers 2 sticks butter or margarine ( do not use fat free etc. ) 1 cup sugar 1, 12 oz package of chocolate chips ( semi-sweet etc. ) 1/2 cup finely chopped nuts of choice heavy duty foil cookie sheet or baking pan with lip This is unusal but easy to make, delicious and looks great. Line a jelly roll pan or a cookie sheet with a lip with heavy duty foil. Place saltine crackers to fit neatly side by side . Preheat oven to 400F. Meanwhile melt butter and sugar in a saucepan over medium heat and stir until butter and sugar are completely melted and smooth. With a spoon drop melted mixture evenly over the crackers and spread gently if needed to coat all crackers evenly. Place in oven and bake 5 to 7 minutes or until crackers and caramel are golden. Remove pan from heat and sprinkle over the chocolate chips. Wait several minutes and use back of a spoon to evenly spread the chocolate which will start to melt. Sprinkle over chopped nuts of choice ( walnuts, almonds , pecans etc. ). Place pan in refrigerator about 1 hour to firm up everything. Remove pan from refrigerator . With a sharp knife, cut through hardened mixture, making even size pieces of choice. Lift off carefully ( you may have to peel foil off bottom of pieces since the caramel may stick to the foil ). Place squares on platter. Keep in a cool place or covered refrigerated until use.
