Hay! do you have any great recipes for making my own wedding cake? I figure a box cake mix for the cake part. But I need a recipe to make the icing look good. Also any tips you have on making a wedding cake Ie: I've heard it is easier to frost them frozen? Any help would be appreciated. Thank you! Tink

Hi Tink, Congratulations and Best Wishes! Here are some ideas for decorating your wedding cake. Vivien submitted this recipe in September 2003 and January 2004. Hi Nancy, Here's a fluffy frosting for Ruth. My sister used this to decorate her daughter's wedding cake in August. They live near the Mojave Desert and the frosting held up well in the heat. Kitty's Creme Frosting (requires heavy duty mixer like a Kitchen Aid) 2 cup milk 6 heaping tablespoons flour Cook the above until very thick, stirring constantly. Chill, several hours or over night w/Saran Wrap on surface to prevent drying. Add 1 teaspoon salt 1-1/2 cups Crisco, beat until smooth. Add 2 cups granulated sugar. Beat until sugar dissolves Optional: 1/2 teaspoon vanilla, 1/2 teaspoon butter flavor OR 2 drops almond flavoring OR 1/2 teaspoon black walnut flavoring. Beat until smooth and creamy Make as many batches as required for the size of your wedding cake. The one that I know of is made by RICHES and is called Bettercreme. It is a frozen product, that you thaw and whip like whip cream. Any kind of cake can be a wedding cake. I have seen everything from the traditional fruit cake to a fresh cake. When I was catering it was very popular in the summer to have a huge slab white cake frosted with a whip cream and fresh fruit on top and sliced and served to the head table by the bride and groom. Then us caters took over and cut and served each guest at the reception. Another popular cake was a carrot cake. The traditional fruit wedding cake is best frosted while frozen or partially frozen. But to avoid disapointment and bleeding be sure to seal with a glaze the cake before applying the frosting. Alot of bakeries now have pre made fake cakes that you can rent and have your wedding cake cut and wrapped in advance. The rental of these cakes is cheap and removes the headache of wedding cake transportation and set up and disasters that can result. I hope this gives you some ideas to use at your wedding and on the cake choices.

Hello and congratulations!!! I made my own wedding cake (took a cake decorating class just to learn how). Yes you are right the layers handle better if they are real cold or frozen. I prefer them being frozen. You can make a very impressive,not to mention delisious, cake from either a yellow cake mix or white cake mix (just make enough batter so you will have nice thick layers and not thin ones. Bake the mix according to directions. may have to adjust cooking times for the extra thickness of the layers. When you are ready to make the cake put your bottom layer on what ever you are stacking it on and with a clean length of sewing thread or clean dental floss held in both hands position the thread in center of the cake layer. cut with thread pulling toward you in a sawing back and forth motion until cake is in two layers. Carefully remove top and put aside, spread store bought pineapple or apricot preserves or orange marmalade on top of layer to within 1/2 inch to sides, replace layer you cut off. Put icing of your choice on top of this layer, split other layer and repeat steps until all layers are finished then ice whole cake top and sides and decorate as desired. Lots of decorators are using silk flowers to decorate the cake with now. Let your imagination go. Best Wishes !!!!.... Kathy ;D
