This is my favorite Quiche.
2 Frozen deep dish pie shells 1 lb ground beef 8-10oz of cheddar cheese 6-8oz monteray jack cheese 1/2 to 3/4 cup chopped onion 1/2 to 3/4 cup mushrooms 1/2 to 3/4 cup green or black olives 1/2 tp 3/4 cup bell pepper 3 eggs 3/4 small carton whipping cream dash nutmeg salt and pepper to taste Preheat oven to 375 degrees using fork make vents in shells. Lightly brown pie shells Brown ground beef and drain well. Divide meat in pie shells. Grate and mix cheeses together and top meat with cheeses. Top cheese with chopped vegetables Beat eggs, whipping cream, and nutmeg together. Pour equal amounts of egg mixture over pies. Bake at 375 for 30 minutes. Let stand 10-15 minutes before serving

If ya want this for breakfast you can sub- with ham- sasuage or hot ,more cheese and no olives. Also cover your pie edges with foil to prevent over baking. Dust bunny

here is one that my family loves Best-Ever Broccoli Quiche
3 eggs, beaten 2/3 cup chicken broth 1/2 cup heavy cream or evaporated milk 1/2 tsp. salt 1/4 tsp. Tabasco 1/4 cup Parmesan cheese 2 cups fresh broccoli, chopped 1 cup Swiss cheese, grated 1/4 cup scallions 1 9-inch unbaked pastry shell In a bowl beat eggs with broth, cream, salt and Tabasco. Set aside. Prick bottom and sides of pastry shell and bake at 450° for 5 minutes. Remove from oven. Sprinkle pastry shell with 1/2 of Parmesan cheese. Scatter 1/2 broccoli, 1/2 of Swiss cheese and 1/2 of scallions into shell. Repeat broccoli, Swiss cheese and scallion layers. Pour egg mixture over these ingredients and sprinkle with remaining Parmesan cheese. Bake at 450° for 10 minutes. Reduce oven temperature to 325° and bake 25 minutes longer or until knife inserted in center comes out clean.

here is another one that we like Golden Country Quiche
2 cups shredded, peeled potatoes (about 1 pound) 1 1/2 cups (6 oz. shredded cheddar cheese divided) 1/2 teaspoon salt, (divided) 4 eggs 1/2 cup milk 1 cup chopped fully cooked ham 1/2 cup chopped onion 1/2 teaspoon pepper
Combine potatoes, 1/2 cup cheese and 1/4 teaspoon salt. Press into the bottom and upsides of a deep greased 9" pie pan.
In a bowl, beat eggs and milk. Add onion, pepper and remaining salt and cheese. Put ham on the potatoes and pour egg and milk mixture over it. Dish will be very full.
Bake at 350° for 45-50 minutes. Let stand 5 minutes before cutting. Serves 4-6. Can be served with a salsa.
