Nancy, this is so very strange. I had gone into the hospital just last Tuesday for surgery on my jaw. The odd thing is, that when I was coming out of general anesthetic, I heard one of the nurses discussing a recipe for the attached Crockpot Swiss Steak Supper. Because I was very groggy I couldn't remember the exact ingredients and it has been on my mind ever since. Now, here it is in your newsletter. Kinda odd don't you think? CROCKPOT SWISS STEAK SUPPER 1-1/2 lb. beef boneless round steak, about 3/4 inch thick 1/2 tsp. each pepper and salt 6 to 8 new potatoes, cut into fourths 1-1/2 cups baby-cut carrots 1 medium onion, sliced 1 can diced tomatoes with basil, garlic and oregano, undrained 1 jar (12 oz.) home-style beef gravy
Remove excess fat from beef. Cut beef into 6 serving pieces. Spray 12-inch skillet with cooking spray; heat over medium-high heat. Sprinkle beef with seasonings. Cook beef in skillet about 8 minutes, turning once, until brown. Layer potatoes, carrots, beef and onion in rockpot. Mix tomatoes and gravy; spoon over beef and vegetables. Cover and cook on low heat setting 7 to 9 hours or until beef and vegetables are tender. Sprinkle with parsley. Makes 6 servings. SOURCE: SIMPLEMEALS NEWSLETTER-DIGEST # 2852
