In a newsletter Catherine asked about her scratch pancakes turning out tough instead of light and fluffy. It might be that you are mixing the batter too vigorously or for too long. Pancakes like muffins or quick breads should only me mixed (wet to dry ingredients) gently and for as little time as possible to just wet the dry ingredients. The batter will have some lumps. Beating it too much makes them flat. You might also try letting the batter sit for 5 or 10 minutes after mixing before you cook them.
