This is for Marjie. This is a copy of a recipe for a molasses stack cake. It can be made with applesauce or dried reconstituted apples. It makes the kitchen smell so good. I am going to make one now. Luv ya Arlene in the Tennessee mountains Ole Timey Molasses Stack Cake 2 sticks (8oz) softened butter or margerine 1 1/2 C sugar 2 eggs 1/2 C dark molasses 1/3 C buttermilk 4 C flour ( more if needed) 1/2 tsp salt 1 1/2 tsp baking soda 2 T cinnamon 1 T ginger Approx. 4 C applesauce or reconstituted dried apples Mix butter and sugar together; add eggs and beat well. Add molasses and butter milk and mix thoroughly. Sift together flour, salt, baking soda, cinnamon and ginger and gradually add to first mixture. Continue adding additional flour until you have a stiff dough. Place on a floured board and knead until you can handle easily. Place the dough back in the bowl. Turn 9 inch cake pans upside down and spray bottoms with PAM. Pinch off a small ball of dough and roll it out on waxed paper. Place bottom of pan on dough and invert waxed paper onto pan. remove paper and trim dough to pan with knife.
Bake about 7 minutes in a preheated oven, removed with a long knife or spatula run under cake. Place layer on a cake plate and cover with applesauce while cake is still hot.....Repeat with additional layers....Leave top layer plain. Wrap in foil and stor in refrigerator 1 or 2 days to soften. To serve, top with more applesauce, dust with confectioners sugar or whipped cream. Enjoy!!!
