These would make a great idea for the the Super Bowl, or a great party finger food.
Makes 8 Servings
Ingredients: 24 large mushrooms; 1 Tablespoon olive oil; 1/2 cup red bell pepper, diced; 2 Tablespoons Mrs. Dash Onion and Herb Seasoning; 1 Tablespoon Mrs. Dash Extra Spicy Seasoning; 3 Tablespoons low sodium chicken broth; 2 oz. smoked Edam or Gouda cheese, finely grated; 1/3 cup dry bread crumbs; vegetable oil spray
Instructions: Wipe mushrooms and remove stems. Chop stems to make 1 cup; set aside. Lightly spray rounded tops of mushrooms with vegetable oil spray. Place mushroom cavity side up on a large cookie sheet. In a a large skillet, cook chopped mushrooom stems and red peppers in olive oil. Add Mrs. Dash Onion and Herb and Extra Spicy Seasonings; and chicken broth. Cook and stir about 1 minute or until all but 1 Tablespoon of liquied has evaporated. Remove from heat and add cheese and bread crumbs. Spoon mixutre into mushroom caps. Cover and refrigerate up to 24 hours. Whne ready to serve, preheat oven to 400F and bake mushrooms uncovered for about 15 minutes or until mushrooms are tender and filling is hot. NOTES: Can be made ahead up to 1 day and bake when ready to serve. Potassium per serving: 350mg
