3 avocados 2 tsps. lemon juice 1/2 tsp. salt 1/4 tsp. pepper 8 ozs. sour cream 1/2 c. mayonnaise 1 pkg. taco seasoning mix 1/2 c. green onion, chopped 3 tomatoes, chopped, drained 8 ozs. cheddar cheese, grated 1 small can pinto beans or refried beans, or several ounces dried pinto beans, cooked
Directions: Mash avocados with lemon juice, salt and pepper until smooth. In separate bowl, mix sour cream with mayonnaise and taco seasoning mix. In a loaf pan, layer beans, avocado mix, sour cream mix, onions, tomatoes and cheese. Makes 4 servings.
