Lime-Basil Butter/Spread
This tangy herbal spread makes a perfect accompaniment for corn on the cob, green peas, string beans or other sweet, mild-flavored vegetables. (For a vegan version, substitute margarine for butter.)
INGREDIENTS: 4 tablespoons well-softened butter or margarine 1 teaspoon fresh lime juice (approximately 1 large wedge) 1 teaspoon finely chopped fresh basil
PREPARATION: Mix together the butter, lime juice and basil with a fork or whisk.
Refrigerate for several hours or overnight so that the butter re-solidifies and the flavors can blend together. (If you're in a hurry, you can put the butter in the freezer for 20-30 minutes instead, but the basil flavor will not be as intense.)
Note: Once you've mixed the lime juice with the butter, it will soften more quickly than undiluted butter.
