These are a few cooking definitions Posted by David on May 2, 2005, 9:17 am 205.208.227.31
These are a few cooking definitions that a guy sent in to another cooking list, in most cases he's pretty close but he's doing some guessing too LOL barbecuing
Cooking with natural wood in a fire pit, such as a campfire or other fire.
smoke cooking Cooking with indirect and low heat with natural wood. (Such as an offset smoker?)
Hot smoking Assuming I'm somewhere near the mark on "smoke cooking" I've no idea what the difference is between this and "smoke cooking". Some help please?
cold smoking Basically passing cool/cold smoke over the item to impart the smoke flavor without actually cooking the meat. Or does it? Is smoked bacon a accurate example of cold smoking?
grilling Cooking with charcoal in a device routinely called a BBQ or barbecue. Usually has a lid and vents for heat control.
