For the 6 quart Nesco Roaster
BABY BACK RIBS
2 to 3 pounds baby back ribs, cut apart
1 bay leaf
1 medium onion, chopped
Hot water to cover ribs
1/2 to 3/4 cup B-B-Q sauce
Preheat 6 quart Roaster Oven to 250*F.
Lightly spray Cookwell with spray cooking oil. Set rack in preheated Cookwell. Arrange meat on rack. Add onion, bay leaf and hot water. Cover; roast 30 minutes or until meat is tender.
Remove meat and rack from Cookwell. Carefully lift out Cookwell, slowly pour out and discard hot water. Clean Cookwell.
Set Cookwell into Heatwell. Cover; preheat to 400* F. Lightly spray Cookwell with spray cooking oil. Set rack in preheated Cookwell. Place meat on rack; brush sauce evenly over meat. Cover; roast 15 to 20 minutes or until sauce is set. Serves 2 to 4

6 quart Nesco Roaster
PORK CHOPS & SAUERKRAUT
4 Tablespoons margarine, divided
1/4 cup apple juice
4 pork chops, center cut, 1-inch thick
2 Tablespoons brown sugar
1 can (16 ounces) sauerkraut, drained
1 apple, cored, chopped
1 large onion, sliced
1/2 teaspoon caraway seeds, optional
Ground black pepper, to taste.
Preheat 6-qt Roaster oven to 400* F.
Lightly spray Cookwell with spray cooking oil. Add margarine. Cover; cook until melted. Arrange pork chops in preheated Cookwell. Cover, roast 10 minutes.
Spoon sauerkraut around chops. Add apple, onion and apple juice. Sprinkle on brown sugar, caraway seed and pepper. Reduce temperature to 300* F.
Cover, roast 25 to 30 minutes (170* F. on meat thermometer). Serves 4

RICE PUDDING:
5 Cups of Milk
2 egg yolks(optional)
1/2 cup Long grain rice
1/2 cup of sugar
3 Tablespoons margarine
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/4 teaspoon grated orange rind
1 teaspoon vanilla
Fresh raspberries to serve.
Lightly spray Cookwell with spray cooking oil. If egg yolks are added, stir into milk until well blended. Pour milk carefully into preheated Cookwell.
Add remaining ingredients, stir until well mixed. Cover, bake 70 to 75 minutes or until set, stirring every 20 minutes.
Serve with raspberries or fresh seasonal fruit and milk.
Serves 4-6
