I know that right now I have more zucchini than I know what to do with, so I am planning for winter with the help of freezer bags!
* I have several smaller sized freezer bags filled with raw, cubed squash, which will come in handy for soups and stews throughout the winter
* I have several bags with raw shredded squash (about 2 cups each) for delicious zucchini breads and muffins
* I have also done the same with sliced peaches so that I can make fresh tasting pies, crisps and cobblers when there is snow on the ground

I had the same over abundance problem this year also. The neighbours got sick of me pounding on there doors with bags of this and bags of that.I did share more than I kept for my family after the freezing and canning and fresh was all done. I found a great need in the community at the soup kitchen and the local food bank for those who were having a hard time making ends meet.I took them the cabbages, carrotts, lettuce, green onions,tomatoes,potatoes,zucchini, basically what ever I had left over and I felt really good helping my friends, neighbours and those I did not know but who had a need greater than my own.
