If you do not like that thick mayonnaise feeling in potato salad or macaroni salads, just add a little pickle juice! It really lightens it up. I usually mix the mayo, juice, and any spices together first before adding it to the rest of the salad. Then everything is distributed evenly without breaking up the potatoes or pasta by stirring too many times. An added bonus - if the dressing is thinner and goes further, you can probably use less mayo. That's good for everyone.
