After opening a can of tomato paste and using just a small portion for whatever recipe I'm using, I put the remainder in a small baggie, flatten it out to a thickness of about a quarter-inch, then into the freezer. Whenever I need a tablespoon or two for cooking I simply break off a piece of the frozen paste. So easy!
