Shoestring Potatoes (curried)
2 lb of large potatoes 1 oz of curry powder 4 garlic cloves (peeled and sliced) 2 tbsp of mayonnaise
If you have a deep fat fryer let it heat to 190 degrees C - 375 F, if not deep fry as you would usually do. While the oil is heating peel the potatoes and if you have a madolin cut them into long thin strips, get them to look as close to 3 -4 “ shoelaces as you can. (julienne)
Put the potatoes in a large bowl and sprinkle over the curry powder, add the garlic give them a good mix. Let the starch leak out and it starts to look a bit sticky. (I am going to do this in a plastic bag next time.)
Remove the garlic and deep fry the potatoes until they are nice a brown. Drain them well on kitchen paper - either put them on an ashet in the centre of the table* or serve individually with dipping mayonnaise in ramekins. You can add ketchup, cilantro or try your favourite addition. *sprinkle the chips with sea salt.

Hello Sylvia, I am newly registered here, but have been following this web site by a link from anniescountry2 for some time. I was delighted to find this recipe on your forum. I have been looking for a curried chips recipe, it seems like forever. A long with a chip recipe with a curry sauce like you might find in Liverpool. Hooray! I finally found it here! It was very good. Thank you for sharing both your recipes and experiences.

Hi Bshemashu (you don't make it easy to remember your sign-in name??!! ) The email address is just as intriguing.
A very warm welcome to Nancy's newsletter and message boards, hope to hear from you on as regular visits as you can manage. I'm glad you are enjoying the banter on the site.
If you ever do get a chance to go to Bruges (if you haven't already been) grab it with both hands. The food is great, architecture superb, people warm - oh dear here I go again.
If you need a recipe, tip or just a chat, you've come to the right place - Nancy and all the Nancylanders are a great fountain of knowledge. And any offers you can make will be greatly appreciated.
Take care Sylvia446

Sorry about the difficulty with my sign in name. I have wondered since your response if I should have created it as the 2 words bshem_yshua. But this is my sign in for other web sites as well. I don't know if this site would let me but I would like to do that.

Well done - everyone says "what's in a name?". No matter which web site I go on I try to keep the same sign in and password. Sometimes one or tother has already been taken - this causes endless problems as I can't remember what my other choice has been. I have opened a file in my word processing programme which I use for a/c numbers. passwords, sign in names the important thing is keeping it up to date. When I joined the message boards I made a couple of booboos. My year of birth should be 1946 and my sign should be sylvia46 i.e. my year of birth, instead of 446, I had to make the effort at first to remember this, but now it's second nature.
I also have a page where I record reader's requests until I hopefully find what they are looking for. This one doesn't get longer and longer like the other one - once I've found what the reader wants or another Member has posted the answer I then delete it.
This may sound as if I am well organised, but believe me I am anything but. I am a virgoan and I am supposed to be super tidy, the astrologers got this back to front in my case.
Happy surfing. ;D ;D

Hi Bshem Yshua
Everytime I make them it takes me back to my short holiday in Bruges.
Haven't had the Shoestrings for a while, may just make some today.
I'm glad you enjoy them too.
