This is a taste and try recipe, strawberries can vary so much from source to source. My strawberries are still green and I'm looking forward to them ripening up - the ones I used were English
A punnet of strawberries 6 large mint leaves (julienned and chopped very fine) 3 tbs sugar a couple of twists of freshly ground black pepperl Clotted cream or creme fraiche to serve
Mash a third of the strawberries with 1 tbs sugar then add the rest of the strawberried - chopped or quartered dependant on size Add the mint, remaining sugar and the pepper Gently mix together and taste (may need more sugar), you could use a small splash of balsamic vinegar. cover and refrigerate for at least 1 hour Serve dressed up in glasses with whatever you fancy - I used creme fraiche and broken up meringue. Gooood!
