These quantities will serve 4 as a starter or as a side for a roast lamb dish. Preheat your Oven to 200oC or 400oF
1lb 2oz of Leeks cleaned and cut in to large diag chunks 1 oz butter 1 oz plain flour 18 fl oz milk 1 and 3/4 oz of mature cheddar cheese Tomatoes
Parboil the leeks for 2 minutes and drain Melt the butter in a saucepan and add the flour, stir and cook for 1 minute. Gradually add the milk stirring until you have a smooth thickened sauce. Stir in 1 and 1/4 oz of cheese, season Place the leeks in an ovenproof dish, pour over the sauce and sprinkle with the rest of the cheese. Place in the oven for approx 20 minutes until the top is golden and appetizing. Serve with grilled tomatoes.
If you want to make this dish a bit more substantial for meat eaters add strips of ham and wedges of tomato before sprinkling with the cheese and baking.
