3 ozs of Butter (room temp) 2 cups brown sugar 1 tsp vanilla 2 eggs 2-1/4 cups plain flour 2 tsps baking soda 3/4 tsp salt (if you use salted butter, omit the salt) a good pinch nutmeg 1 tsp cinnamon 2 cups applesauce 1/2 cup raisins 1 cup walnuts Icing sugar (optional)
Preheat oven to 180o C/350o F
Cream the butter, add the brown sugar and continue mixing. Add the eggs one at a time and the vanilla, Mix until well blended and fluffy.
Sift the dry ingredients then add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour all the mixture into a large loaf pan and bake for about 40-45 minutes. Turn out and cool, then dust with the icing sugar.
