Don't know why but I'm in a biscuit baking and eating mood. These are crunchy biscuits and they do melt in the mouth. They will keep well wrapped in greaseproof paper, but mine never have seen greaseproof paper. Don't freeze.
Melting Moments
Makes 24
Butter - 110g (4 oz) Caster sugar - 75g (3 oz) Egg yolk - 1 Vanilla extract - few drops Self-raising flour - 150g (5 oz) Crushed cornflakes - for rolling Glace cherries - halved for decoration (optional) Icing Sugar/Confectioners Sugar for dusting
Pre-heat oven to 190 °C / 375 °F / Gas 5. Grease two baking sheets Cream the butter and sugar together, until pale and fluffy. Beat in the egg yolk. Add the vanilla and stir in the flour to give a smooth dough and divide into 24 portions.. Form each piece into a ball and roll in crushed cornflakes. Press half a glacé cherry in the centre of each biscuit (if using). Place the balls on the baking sheets and bake for 15-20 minutes. Cool on the baking sheets for a few moments before lifting on to a wire rack. Whilst they are still warm put some icing sugar in a small sieve (tea strainer will do) and sprinkle over biscuits

Thanks for keeping me right Chris did tell you that it is confusing between cookies/biscuits, just knew that whichever one I picked it would be the wrong one. Next time let me know before hand, I had already sent an email to friends telling them where to find them. If someone is looking for a biscuit like this one would they necessarily come to this site?
If you make and enjoy these biscuits a good variation is to sandwich 2 together with the following Butter Cream
before sprinkling the icing sugar on the biscuits: 80g softened butter 115g sieved Icing Sugar (confectioners) 1 tbs of papaya juice (pour off most of the syrup from an 8 oz can of papaya fruit juice, sieve some of the fruit until you have the required amount)
Beat the butter and sifted sugar together and stir in the passion-fruit pulp. Sandwich 2 biscuits together and sprinkle with icing sugar.
You could also try the following - whichever flavour is your favourite Variations: strawberry, mandarin oranges and passion-fruit.
