These fritters can be served with ice cream, your favourite jam or sauce - remember to use the juice from the canned pineapples in any sauces you may make.
Pineapple Fritters
For 4 people
4 ozs Flour pinch salt 1 egg 1/4 pt milk 2 tbs water
1 medium can pineapple rings 1/2 oz flour oil for frying little castor sugar*
Sieve the flour and salt into a bowl, add the egg, beat, then gradually beat in the milk and the water to give a thick coating consistency.
Strain the pineapple rings and dust lightly with flour.
Heat the oil until a cube of bread turns golden brown within a minute
Dip the pineapple rings into the batter and fry in the hot oil until crisp and golden brown
Drain on crumpled kitchen roll
Dust with castor sugar just before serving.
*castor sugar is slightly finer than granulated sugar.
