I found this in a newspaper supplement it was sent in by Jane Clarke:
Mint and Cumin Water (serves 2)
40g fresh mint Juice of 2 limes 1/2 tsp ground cumin a pinch of salt 1-1/2 tsp sugar Crushed ice Well chilled sparkling water Extra mint leaves and lime slices to garnish
Put the mint, stalks and all, into a blender with the lime juice and blitz to a puree. Press the puree through a sieve into a bowl and discard the debris. Add the cumin, salt and sugar, adjust the quantities to your taste.
Fill a couple of tall glasses with crushed ice, pour over the minty liquid and top up with sparkling water. Garnish with sprigs of mint and slices of lime and enjoy.
