This is a good way of using up the veggies in your vegetable box
Vegetable Soup
8ozs/200g chopped mixed veg such as celery, carrot, turnip 1lb/300g potatoes, peeled and cubed 1 tbsp oil 1 1/4 pints/700 ml vegetable stock crème fraiche Fresh Parsley or coriander, roughly chopped
Soften the raw vegetables in a little oil for a few minutes. Cover with the stock and simmer for 15 minutes until the vegetables are tender. Blend until smooth, then season*.
Serve with a teaspoonful of crème fraiche and a sprinkling of chopped fresh herbs
*This soup freezes well.
