I am fed up buying jars of different spices, they are costly and have you noticed that the refills that you want are either not available or cost just as much as the original glass jar. There is a well known distributor who seems to have cornered the market and I have decided to stop buying the pesky little jars and make all my own. I did notice that they have now started an alternative salt packaged in flat tins, they are a bit of a fiddle to open and the contents usually end up splattered all over the kitchen work surfaces.
You probably have all the spices you need in separate jars to make all the fancy ones that are now flooding the food stores.
This one was posted on the newsletter on the 9th of November, but it will save a lot of searching if I post it here as well:
Mixed Spice
6 teaspoons ground coriander 5 teaspoons ground cinnamon 4 teaspoons ground allspice 3 teaspoons ground nutmeg 2 teaspoons ground ginger 1 teaspoon ground cloves
Mix all the spices together. Try to use fresh whole spices and grind your own, the flavour is outstanding.
