This is a cheap, easy and great dish that can be made from your store cupboard when inspiration has deserted you.
Crab, Lemon and Chilli Linguine
Serves 4
2 tsp crushed garlic 1 tsp red chillies, chopped very fine 1 lemon, zest and juice 2 Tbsp parsley (flat leaf if you have it), chopped 2 x 6oz/170g tins crab meat* in brine 12oz/350g linguine (like spaghetti, but flat and holds the sauce better) 3 Tbs olive oil
Cook the pasta in salted, boiling water until softened but firm. Drain then return to pan. Mix the crab with its brine, garlic, chilli, lemon, parsley and 3 Tbsp olive oil in a bowl, season. Stir the crab mixture into the pasta, then return to a low heat, stir gently until the pasta has absorbed most of the liquid.
Serve immediately with lots of crusty bread
*One of my friends is allergic to crab meat, she uses tuna in olive oil - I presume she discards most of the oil, (must ask her).
