I haven't tried these yet. My friend Gina and her daughters were visiting today and brought this recipe, which was promised to me approx 6 months ago. Better late than never. I plan to try them soon. Thanks Marina
Chocolate and Coconut Slices
Preheat oven to 180oC/350oF Makes 24
6 oz/175g/2cups crushed digestive biscuits 2 oz/50g/1/4 cup caster sugar pinch of salt 4 oz/115g/1/2 cup butter, melted 3 oz/75g/1 1/2cups desiccated coconut 9 oz/250g plain chocolate chips 8fl oz/250ml/1 cup sweetened condensed milk 4 oz/115g/1 cup chopped walnuts
Combine the crushed biscuits, sugar, salt and butter in a bowl. Press the mix evenly over the base of an ungreased 13 x 9"/33 x 23cm baking dish.
Sprinkle the coconut over the biscuit base, then scatter over the chocolate chips. Pour the condensed milk evenly over the chocolate. Sprinkle the walnuts on top. Bake in the oven for 30 minutes. Turn out on to a wire rack and leave to cool. These treats are easier to slice if they are left to cool overnight.
