These sticky bananas can be served as a dessert, a mid-afternoon treat or can be served with Chicken Maryland.
Fried Bananas
Serves 4
4 oz/115g plain flour 1/2 tsp bicarbonate of soda pinch of salt 2 Tbsp sugar 1 Egg 6 Tbsp water 1 Tbsp sesame seeds 4 Bananas Sunflower oil for deep frying 2 Tbsp clear honey to serve
Sift the flour into a large bowl with the bicarbonate of soda and salt. Stir in the sugar, then whisk in the egg and enough of the water to make a smooth thin batter*. Whisk the sesame seeds into the batter. Peel the bananas and half them lengthways, then cut each one in half across the centre. Heat the oil in a work or deep-fat fryer until a cube of bread browns in 30 seconds. Dip the banana quarters into the batter to coat, then deep-fry them in batches until golden brown. Remove the fried bananas with a slotted spoon and drain on kitchen paper. Transfer to serving plates, drizzle with the honey and serve.
*The same batter can be used to coat slices of peeled and cored fresh pineapple.
