1 pound ground beef 1 medium size onion, red or yellow, minced in small pieces 1 can (10-3/4oz) tomato soup 1 cup salsa 1/2 cup milk 1 cup shredded Cheddar cheese, divided
Directions: Preheat the oven to 400 degrees. Coat a 2-quart baking dish with nonstick cooking spray. In a large skillet, brown the ground beef and onions over medium-high heat, stirring until cooked; drain. Stir in the soup, salsa, milk and 1/2 cup cheese; spoon into the baking dish. Cover and bake for 30 minutes, or until hot. Sprinkle with the remaining 1/2 cup cheese.
You can serve these with warm tortillas, or spooned over tortilla chips.
