MINT SAUCE ~ OLD FASHIONED
3 x tablespoons washed, dried, very, very finely chopped young mint leaves... 2 x tablespoons boiling water... 2 x tablespoons sugar... 1/4 x cup white or malt vinegar...
a few drops of lemon juice and a pinch of salt [optional]
place prepared mint leaves into a small heat proof bowl ~ pour over the boiling water and add the sugar ~ stir to dissolve... cover and stand to cool... add the vinegar and stir well.. leave sit for about 2 hours before serving.. add lemon and salt if desired.. serve over lamb..
discard leftover sauce ~ make fresh when wanted....
