A quick and easy, tasty dish.
Sausage Provencal
Serves 2
8 oz/225g pork sausages 1 small onion, chopped 1 Tbsp sunflower oil 1/2 green pepper, deseeded and chopped 3 1/2 oz/100g courgette, cut in chunks 1 clove of garlic, crushed 400g can of plum tomatoes, chopped
Fry sausages and onion in the oil for 5 minutes. Add green pepper, courgette and garlic. Cook for a further 5 minutes. Stir tomatoes into pan. Simmer for 15 minutes, stirring occasionally.
Season to taste and serve hot, accompanied by rice or boiled potatoes, green beans and crusty bread.
