Scallops with Chilli and Lime
Serves 2
2 Tbsp olive oil 10 scallops 2 large garlic cloves, chopped 2 tsp chopped fresh red chilli juice of 1 lime small handful of fresh coriander, roughly chopped
Heat the oil in a non stick pan until hot, add the scallops and pan fry for 1 minute until golden underneath. Flip them and sprinkle with the garlic and chilli. Cook for 1 minute more, then pour over the lime juice and season.
Serve immediately, scattered with the coriander.
