1/4 cup finely chopped onion 1/4 cup finely chopped green pepper 3 Tbs butter 6 large tomatoes, peeled & quartered 3/4 tsp salt 1/8 tsp ground black pepper 1/2 tsp sugar 1/8 tsp garlic salt 1/2 tsp dried oregano leaves
In a non-metallic casserole melt butter in Microwave for 30 seconds. Add onion and green pepper, and heat, uncovered, in microwave for 3 minutes or until lightly browned. Add remaining ingredients and stir to combine. Heat, covered, in microwave 3 to 5 minutes or until tomatoes are very tender. Stir occasionally.
Serve hot as a side dish or on toast as a light snack.
