These drinks should carry a Government Warning! They are good, but do take care.
Iced Strawberry Margaritas
Serves 4
1 Tbs boiling water
1 Tbs caster sugar
1 Tbs fresh lime juice
Caster sugar, extra, to serve
1 x 250g punnet strawberries, washed, hulled, quartered
1 1/2 cups ice cubes
125ml (1/2 cup) tequila
60ml (1/4 cup) Cointreau liqueur
Place water and sugar in a heatproof bowl. Stir until sugar dissolves. Place in the fridge for 30 minutes to chill.
Place the lime juice in a small bowl. Place the extra caster sugar on a plate. Dip rims of 4 martini glasses into the juice, then into the sugar to coat.
Place the sugar syrup, strawberry, ice cubes, tequila, Cointreau and remaining lime juice in the jug of a blender and blend until smooth.
Divide the margarita mix among prepared glasses and serve.
