This is my basic dressing mix, I have added different ingredients, depending on what's available, i.e. garden peas, crumbled blue cheese etc.
Salad Dressing
Makes enough for dressing for four large bowls of salad.
1 Tbsp lemon juice 3 1/2 fl.oz/100 ml extra virgin olive oil 3 1/2 fl.oz/100 ml groundnut oil 2 Tbsp white wine vinegar 2 tsp runny honey 1 tsp Dijon mustard 1 clove garlic, peeled and cut in half Maldon salt and freshly ground black pepper
Place all ingredients in a screw-top jar and shake well. Taste and adjust if necessary. It's important to taste as you add - ingredient strength can vary.
Try to prepare at least 1 hour before using so that the garlic has time to infuse into the dressing.
This will keep for 1 - 2 weeks.
